Cake Tastings
We do not have a set menu anymore because we individually customize our cake flavors based on your flavor choices. Let us know about flavors you love and we will create cake flavor pairings to match your favorite taste options. How many flavors can you choose? It’s up to you! Yes, every tier can be a different flavor choice.
Our buttercream icing is always delicious Italian Meringue Buttercream (IMBC). The most delicious cakes in the world are covered with Italian Meringue Buttercream.
Need a fondant covered cake? Yes, we also work with fondant covered wedding and specialty cakes. My fondant wedding cakes are covered with my own fondant sugar paste.

Vanilla Almond Cake*
Traditional wedding cake made with buttermilk, vanilla and pure almond extract.

Heavenly Chocolate Cake*
Rich chocolate cake made with gourmet chocolate/ chocolate ganache filling/ chocolate buttercream.
If you love chocolate this is your cake! It’s very moist and made with dark chocolate; adding a layer of chocolate ganache between each cake layer makes for a divine chocolate experience. Consider adding: raspberry preserves, Carlton’s Sugared Pecans, Salted Caramel or Espresso buttercream (be still my heart).
Southern Red Velvet*

Almond Chambord
Almond cake/ raspberry filling/ Chambord infusion/ Almond Buttercream
Orange Grand Marnier
Light, orange cake infused with Grand Marnier liqueur, filled with fresh orange curd and finished with orange buttercream.
(Optional- add a thin filling of chocolate ganache and perhaps even chocolate buttercream. Orange and chocolate are incredible together!)
Pink Champagne*

Chocolate Ganache
Made with couverture Valrhona or Callebaut chocolate and heavy cream, chocolate ganache is offered instead of buttercream per request under my fondant cakes for an additional $20/tier. Ganache stands up beautifully in Atlanta humidity and heat. Naked ganache cakes are an artistic statement and offer a delicious alternative to buttercream. Chocolate ganache is available in milk chocolate, white chocolate or dark chocolate options. I highly recommend that fondant wedding cakes have a layer of ganache underneath the fondant.
Buttercream
Our buttercream is always gourmet Italian Meringue Buttercream made fresh in house. This is a professional buttercream made with egg whites, heated sugar syrup, European butter and real vanilla beans. It’s silky and divine! We custom flavor this buttercream to match our cake flavors.

Carlton’s Cakes offers 1 hour cake tasting appointments for wedding clients. Please book your wedding with your venue before setting up a cake tasting.
Tasting appointments are for 2 people and we recommend that you choose at least 4 flavors for your tasting; tasting samples are $25 per flavor. Please let us know if there are any food allergies at the time of booking your tasting appointment.
Carlton’s Cakes typically offers one tasting day per month. Please book your appointment at least 6 months in advance of your wedding. Our calendar often books up 8-12 months in advance.
PLEASE let us know in advance if a friend or family member is coming with you to your tasting appointment. There is an additional charge of $15 per guest coming to the appointment.
