Carlton's Cakes uses the highest quality ingredients available to the industry in our creations including Callebaut Belgian chocolates, European butter, specialty pastry flours including grain-free flours (gluten-free), fresh fruits and pure extracts made with grade A Madagascar Bourbon vanilla beans. The "Bourbon" vanilla bean refers to the name of bean, not a liquor product. Bourbon vanilla beans from Madagascar are superior, with flavor and aromatic qualities that make Madagascar vanilla beans the most popular and sought after vanilla variety in the world.

Our cakes are made with premium pastry flour OR Gluten Free flours. We source NON-GMO and use all organic ingredients. We are against using chemicals of any kind. No preservatives are used in our creations.

We can accommodate customers with food allergies including: gluten intolerance, lactose, vegan and nut allergies. Gluten Free and Vegan options are available and are also made from scratch.

FOOD ALLERGY STATEMENT: We are NOT a certified gluten-free facility. Individuals with celiac disease or serious food allergies are encouraged to seek bakeries that are completely dedicated to being gluten-free, nut-free, soy-free and/or vegan. At this time our vegan offerings are NOT soy-free. Our vegan cakes include SOY and FLAX SEED.

Royal Wedding

This flavor combination has quickly become a favorite of our brides. Delicate lemon cake made with fresh lemon zest, brushed with Elderflower Liqueur, filled with fresh lemon curd and finished with Elderflower infused Italian Meringue Buttercream Icing. This flavor is also available Gluten Free and Vegan.

Magnolia Bride

Our clients love this cake combination! Our Vanilla Velvet cake is brushed with champagne, filled with strawberry compote and finished with champagne infused Italian Meringue Buttercream. The result is a delicate strawberry and champagne combination.

Southern Praline

Premium Flavor: Our award-winning Vanilla Velvet cake is brushed with Frangelico liqueur and filled with our cream cheese filling, our own Croquant Pecans (pecans, spices, egg whites, fleur de sel),  dark chocolate ganache made with Callebaut chocolate and Italian Meringue Buttercream.

Carrot Cake Supreme

Premium Flavor: This is THE best Carrot Cake in the World! A very moist and delicious carrot cake made with freshly shredded carrots, pineapple, coconut and pecans.  We brush this cake with Four Roses® Bourbon for added flavor. This cake goes perfectly with our traditional whipped cream cheese filling.

A traditional Southern favorite that goes perfectly with our cream cheese filling. Consider adding our own croquant pecans for an added boost of flavor and deliciousness. Decorated Shortbread Cookies

These melt-in-your-mouth shortbread cookies are made from scratch and decorated with royal icing. They are perfect for weddings, bridal showers, baby showers and birthday celebrations.

Flowers and edible hand made elements can be added to these cookies. Most any shape and color is available for these delicious creations!

Berry Jubilee

Premium Flavor: This delicious cake combo includes our Four-Fruit Compote made with strawberries, blueberries, blackberries and raspberries. We add micro-grated lemon zest and Elderflower Liqueur to enhance the flavors of the berries. This combination includes our delicious Cream Cheese filling and is finished with our Italian Meringue Buttercream. If you love a berry pie you will fall in love with this cake flavor!

Amaretto Grande

Premium Flavor: This delicious cake flavor features our almond cake that is infused with Amaretto liqueur, filled with Marscapone cheese and Honey filling and we add a thin ribbon of Raspberry Puree to further enhance the flavors. This cake is finished with Almond Italian Meringue Buttercream. Delizioso!

Wedding Favors

Carlton’s Cakes is now offering French Macarons for our clients. We use the traditional french method to make our macarons which are always gluten free. Our French Macarons are perfect as wedding favors and are available in solid or swirled colors. We offer two wedding favor box options. Choose between a clear box that holds 1 macaron or a  larger white lantern box that holds two macarons and includes a custom label as well as ribbon.   Please inquire for more information.  Traditional French Macarons (2″ diameter) are $3 per unit, swirled color macarons with sugar pearls are $3.50 per unit, Galaxy macarons are $5 per unit. Our french macarons are delicious filled with Italian Meringue Buttercream. We also offer other fillings: strawberry, lemon curd, chocolate ganache, coffee buttercream, salted caramel and more.

Our French Macarons are made the traditional way in small batches using almond flour, confectioner’s sugar and egg whites. These delicacies can be tinted almost any color to match your event decor. We offer the following fillings for our macarons: Lemon Curd, Italian Meringue Buttercream, Dark Chocolate Ganache, White Chocolate Ganache, Salted Caramel, Coffee Buttercream, 4 Berry Compote, Raspberry Puree. Macarons are about 2″ round and 2″ tall when filled.

Our macarons make the perfect wedding favor gift for your guests and fit beautifully in our clear or white favor boxes.  Larger boxes of macarons are available for your special guests.

Italian Meringue Buttercream: The Professional's Choice. This silky buttercream is made with egg whites, butter, and flavorings. This buttercream is not overly sweet and is superior in flavor, texture and stability.
Italian Pastry Crème Filling- This vanilla filling is the perfect balance to buttercream icing because it isn’t too sweet. This is our most popular cake filling and is a key element in our Salted Caramel cake flavor.
Italian Meringue Chocolate Buttercream- Light and fluffy chocolate buttercream made with Callebaut chocolate and has a superior flavor and silky texture.
